Tomato,baffalo mozzarella with pesto

  • INGREDIENTS
  • 2large ripe tomatoes, sliced into six
  • 4 Tbsp basil pesto
  • 2 oz Buffalo mozzarella or bocconcini cheese
  • 6 fresh basil leaves, for garnish
  • Basil Pesto (Makes 3/4 cup)
  • 1 cup packed fresh basil leaves
  • 2 Tbsp freshly grated Parmesan cheese
  • 2 Tbsp light cream cheese
  • 2 Tbsp extra virgin olive oil
  • 3 Tbsp water or reduced-sodium stock
  • 1 Tbsp toasted pine nuts
